Homemade cooking

If you had told me a week ago that I would be making homemade granola I would’ve thought you were crazy. I’m not the type. I don’t can fruits and vegetables…I don’t really even cook anything that has more than a few ingredients. But…on a whim, I got it in my head to try.

I discovered from various recipes that it would appear you can’t really screw up the recipe. You just put in what you like. So…

I put in 3 cups of Old fashioned Oats (I think that’s a basic required item)

a 1 and a half cups of nuts (I chose almond slices)

1-2 cups of seeds (I chose one cup flax seeds and one cup sunflower seeds)

3/4 cup sweetner (I had a variety of sweetners to use up so I just combined them all…maple syrup, honey, regular syrup and a 1/4 cup of brown sugar) Should be an interesting effect ๐Ÿ™‚

You can add whatever spices interest you. I like Cinnamon and Nutmeg so I added a half tsp. of each.

You can also add vanilla or other extracts so I added a half teaspoon vanilla and a half teaspoon coconut extract. I was living on the edge after all ๐Ÿ™‚

You then add between a 1/4 cup to 1/2 cup of oil. I chose coconut oil. We’ve been using it more lately and I figured it would probably work nicely.

I also added 1/4 cup of cocoa, just because chocolate makes everything better in my opinion ๐Ÿ™‚

I also added a cup of coconut, I think it will bake nicely and add some flavor that I will enjoy.

I put in 1 tsp. of Kosher salt

After it cools I’m going to add some dried blueberries (trying to be healthy and all ๐Ÿ™‚ and some chocolate chips…they’ll balance out the blue berries ๐Ÿ™‚

It made enough to cover a large cookie sheet and is currently baking in the oven at 300 degrees for 45 minutes. I’ll stir it once after 30 minutes.

I haven’t tasted it yet…but it looked promising and I’ve been told by other homemaking granola people that it tastes significantly better than store bought granola. I’ve eaten my fair share of store bought granola…so I’m curious to do the taste test myself.

I will say it’s nice to be able to put in the ingredients that you care for and not have to deal with the stuff you don’t like. I will be curious to try various other combinations too. Maybe pecans instead of almonds or pumpkin seeds instead of one of the other seeds. Maybe some other spice like ginger. Who knows…the options seem pretty open.

If this isn’t off the ride for me, I don’t know what is! I never post about food and recipes. Later this week my juicer should arrive…that will be a whole new experience for us :). Should be great fun.

Change all around. Sometimes you’ve got to shake things up.

This morning in church I was described in a humorous way as being crazier than a hoot owl or maybe it was a loon. I had to smile…I think it describes me to a T and I’m not even ashamed about it. I like my crazy self. It’s only taken me 42 years to get to that point. Sure feels good ๐Ÿ™‚
